Lohikeitto Recipe

 

Serves 2-3 hungry campers

 

Ingredients

 

  • 500g skinless salmon fillets, cut into chunky 2cm cubes

  • 1 large leek, finely sliced and well washed

  • 25g butter

  • 175ml single cream

  • ¼ tsp allspice

  • 375g Charlotte potatoes, diced into 2cm cubes

  • 750ml fish stock

  • 30g fresh dill, chopped

  • 2 bay leaves

  • Salt & black pepper

 

Method

 

  1. Slice the onion, leak and carrot. Gently fry in butter and oil in a saucepan until soft.

  2. Add diced potatoes, place salmon on top, skin side down, add the bayleaf and allspice and fill with water or fish stock.

  3. Gently simmer for 20 minutes, use this time to make a smorgasbord.

  4. Remove the salmon and peel off the skin.

  5. Add cream to saucepan, simmer gently and then add the dill and season the soup.

  6. Ladle into a bowl and place the salmon on top in the dish, squeeze a lemon over it and garnish with more fresh dill.

  7. Serve and enjoy
